Recipes using Zucchini
If you grow squash or zucchini in the summer, you know you'll get a boatload of harvest even just from a few plants. Now, I have a squash plant growing here, it's a volunteer that just grew in a strawberry patch because I had grown vegetables in this area last year. This volunteer is six feet wide and it's producing a lot of squash. Well, growing squash is one thing, but what to do with it afterwards is also very necessary. So in this blog, I'll show you five ways to use fresh squash. Let's get started.
Number One: Squash Pancakes
In order to make some squash pancakes, first grate some squash. You can leave the peel or the skin of the squash intact while grating. Grate three medium-sized squash, which is equal to about a cup and a half. Next, add three to four eggs to your grated squash, add one teaspoon of salt and add pepper to taste. Add half a teaspoon of oregano and a quarter cup of cornflour. Add one full green chili, I like to use serrano chilies right from my garden. Add five to six cloves of sauteed garlic and then add a tablespoon of olive oil. Now mix all the ingredients with a fork. Mix all the ingredients very well. Add some oil to the skillet and keep it on medium heat. I like to use a cast iron skillet. Add half a cup of the mixture right in the middle of the pan and then spread the mixture around to make a pancake consistency. After cooking for about a couple of minutes depending on the heat, flip the pancake. After another two minutes depending on the heat, the savory squash pancake is ready. Transfer the cooked pancake to a plate and stack one on top of each other. Top the savory squash pancakes off with some avocado salsa. You can also add some sour cream for taste. The savory squash pancakes are ready.
Number Two: Baked Zucchini Fries
In order to make big skinny fries, take a fresh zucchini and cut it into long slices. Make sure all the pieces are evenly cut for even baking. Crack one egg into the container and only use the egg white and not the yolk. Add half a cup of grated parmesan to a bowl and add a quarter teaspoon of thyme as well, and then sprinkle a little bit of dried oregano in the bowl as well. Add paprika to taste. You can add more paprika to make the zucchini fries more spicy as well. I tend to use about half a teaspoon of paprika. Add one teaspoon of salt to the bowl and then add black pepper to taste. Mix all the ingredients in the bowl. Add crushed breadcrumbs to another bowl. Now dip the zucchini slices in egg whites and then coat them with the parmesan mixture and then coat the zucchini slices with breadcrumbs. Keep adding the zucchini slices to the baking tray. Repeat the same process with all of the zucchini slices and make your baking tray full. Preheat the oven to 350 degrees Fahrenheit. Add the zucchini slices to the oven and bake for 25 minutes. After 25 minutes, the zucchini fries are ready. These zucchini fries are really healthy, and you don't feel guilty about eating a lot of these fries. Enjoy these fries with some ketchup and hot sauce.
Number Three: Zucchini Noodles
Add some olive oil to the pan and then add a tablespoon of minced garlic. Saute the minced garlic in the pan. Add some cut portabella mushrooms or mushrooms of your choice and then saute the mushrooms. Add some bell peppers to the pan and saute some more. After all the ingredients are sauteed, add the sautéed vegetables to the zucchini noodles and mix well. Season with salt and black pepper to taste, and give the noodles one last mix to ensure that the vegetables are evenly distributed. Plate your zucchini noodles and enjoy!
